on a dumpster. Direct pressing, whole bunch.
Winemaking: Cold must settling, long fermentation in barrels of 2 to 4 wines. Aging in barrels for 10 to 12 months.
Robe : lemon yellow
Nose : nose of spices slightly vanilla opening on to ripe yellow peach, candied lemon and cloves.
Mouth : straightforward attack, citrus fruits (lemon and grapefruit) are elegant; the middle palate is full and rich. The minerality conferred by our tufa soils gives it relief in the mouth. It ends with a long and pleasant spicy note.
Food and wine pairing : white meats or dishes with sauces.
